Trying to get back on track with Project 366 (previously called 365 because I sort of forgot it was a leap year).
L making a snow angel this afternoon. It finally looks like Winter outside and the kiddos got to sled and have hot cocoa to warm up after they came inside. :-)
Because it’s helpful for me to jot down what sugar free and gluten free looks like for me, here’s today’s log:
Breakfast: 3 scrambled eggs with farm feta, two cups coffee with stevia and milk
Snack: 1/2 apple
Lunch: Huge salad (4 cups lettuce/arugula, 1/2 cup grape tomatoes, 1/2 yellow bell pepper) with 1 can Henry&Lisa tuna, a few capers, and a drizzle of olive oil
Snack: 8 soaked and dried walnut halves
Snack: tea w/ milk and stevia, 4 prunes, 8 soaked and dried walnut halves
Supper: slow-roast pork, grits, mixed vegetables (approx 1 cup)
I’m happy with that — I met my goal of at least six servings of vegetables and fruit and, although I’m not logging it, I drank lots and lots of water throughout the day. I can tell I’ll be shopping much more often for fresh veggies and fruit. It may be time for a Costco run for the big container of organic salad greens.
